If you are planning on using this product in a commercial setting, do not waste your money. This oven design is extremely flawed, unusable even in the best of settings. 1) Propane burner is underpowered, will not provide enough BTU to adequately heat the oven. Max temp achieved was around 500*F, no hotter than a home oven. 2) Oven dome is too high, causing all the heat to collect at the top and exit the poorly designed chimney. 3) Pre-heating with the front cover on (even with vent holes) will cause oxygen starvation and a flameout, so you will have unburnt propane, or carbon monoxide buildup. Either one is a huge risk to the cook. 4) The thermometer, even with a top 700*F+ reading is aspirational at best. The probe is located on the right side of the oven, furthest away from the heating element, and not even close to the dome where it's the hottest. Reading with an IR thermometer indicates around 400*F on the stones after 45m preheat, not even hot enough to bake a French baguette. This design is saturated on the market from any vendor selling home pizza ovens, all with different brand names but essentially the same device. Save yourself the money, wasted time, disappointment, and get something better.
